The producer

Domaine Alice et Olivier De Moor

Equipped with their national diploma in oenology, Alice and Olivier De Moor worked in several wine estates before settling in Courgis, in the Chablis appellation. At that time (1989), no vines yet! The couple purchased seven hectares of woods and meadows, and started planting. 1995 marked the year of their first vintage. The vineyard is immediately farmed organically, and, contrary to many austere and green Chablis (meaning under-ripe), the wines are full of flesh. It must be said that the couple does nothing like the others. Soils covered with grass, reduction of the yields through pruning, manual work... The vineyard is cultivated like a garden. In the cellar, the wines are very little manipulated. The harvest, which is in flawless condition, ferments under the action of indigenous yeasts. The winemaking goes on without inputs, on lees, and generally without sulfur. The wines are never filtered. The De Moor's Chablis distinguish themselves by their brilliance and unparalleled purity. The mouthfeel is particularly fluid, sleek and crystalline with a saline finish.
